SNOW PEAS Hoh laan dau

SNOW-PEAS-Hoh-laan-dau
Edible peapods measure about 2-4 inches long and about 1 inch wide, with a stalk at one end and often the remains of a flower at the other end. Snow peas (illustrated) are flexible and flat, with bulges where the peas are growing. There are two types: robust and dainty. The robust peapods are about twice the size, both length and width, of the smaller ones.

The smaller the pod and the smaller the peas inside, the more tender and sweet the peapods. The smaller type of snow peas - which are more flexible in the fingers and often still have bits of flower at the tips - are generally younger, sweeter, and more tender.
