Nga choi are bean sprouts. Dai means big. Dau are beans. Thus, shoppers identify these sprouts by the big bean at the end. They may be further distinguished from mung bean sprouts by their general robustness (4-5 inches long).

The beans should be yellow with no tint of green or hint of emerging leaves. The shoot should be clear white from head to tip.
